An effect of pre-slaughter keeping of cattle on meat quality

The main content of the paper is devoted to the question of cattle pre-slaughter keeping after transportation to a processing enterprise. The majority of researchers consider it necessary to ensure that animals are rested before slaughter for stress re-duction and restoration of physiological functions of the body. Stress that arises in animals before slaughter leads to quality reduction in obtained meat, which not only deteriorates quality of manufactured products but also leads to an increase in eco-nomic losses in the meat industry.
