Статья посвящена важной и сложной проблеме производства экологичных мясных продуктов за счет применения безвредного биоразлагаемого пищевого пленочного покрытия. Определена водопоглотительная способность пленок, изучены прочностные характеристики. Экспериментально доказана эффективность влияния разработанного покрытия на органолептические, микробиологические показатели охлажденной баранины в процессе хранения. Обоснована динамика протекания окислительных процессов и сроки хранения мясного сырья.

Practical realization of the technology for mutton storage in the biodegradable film coating

The article is devoted to an important and complex problem of the production of environmentally friendly meat products through the use of a harmless biodegradable food film coating. The water-absorbing capacity of the films was determined, and the strength characteristics were studied. The effectiveness of the influence of the developed coating on the organoleptic, microbiological indicators of chilled lamb during storage has been experimentally proven. The dynamics of the course of oxidative processes and the shelf life of meat raw materials are substantiated.
