Abstract. Despite the fundamental changes in the global economy and the tense international situation, the transformation of the food system remains on the agenda of investors, politicians and scientists. This transformation is global in nature and its main issue is the replacement of animal protein with all kinds of high-tech alternatives. The current state and prospects for the development of technologies for the production of alternatives, or rather, analogues of meat products, became the subject of the next annual forum "ProProtein". It took place in full-time correspondence format on September 22.
