АННОТАЦИЯ: На учебно-производственном птичнике и на кафедре технологии хранения и переработки продуктов животноводства РГАУ–МСХА имени К.А. Тимирязева в течение 2020 г. были проведены исследования по изучению мясной продуктивности молодняка гусей линдовской породы. Установили их категории упитанности с последующим определением качества мясного сырья по пищевой и биологической ценности, полученного от этих категорий. В результате исследований пришли к заключению, что мясо гусят I категории упитанности по своей биологической и пищевой ценности превосходит мясо гусят II категории.

Biological and nutritional value of meat from young geese of Lindovskaya breed.

Abstract. At the educational and production poultry house and at the Department of Technology of storage and processing of animal products of the K.A. Timiryazev RGAU-MSHA during 2020, studies were conducted to study the meat productivity of young geese of the Lindov breed. Their categories of fatness were established, followed by the determination of the quality of meat raw materials according to the nutritional and biological value obtained from these categories. As a result of the research, it was concluded that the meat of goslings of the I category of fatness surpasses the meat of goslings of the II category in its biological and nutritional value.
