Abstract. Until recently, Russian manufacturers of food additives were 80% dependent on imports of ingredients from the West, now they depend on imports from the East for the same 80%. Does Russia have the potential for import substitution of food ingredients? How long will we change one addiction for another, wondering why the USSR produced everything that we now buy in Turkey, China, India and everywhere where sellers ignore (so far ...) Western sanctions? The potential of the domestic industry in the production of ingredients was assessed by the President of the Union of Food Ingredients Producers (SPPI), Director of the Research Institute of Quality, Safety and Technology of the Russian University of Economics.
