АННОТАЦИЯ: Статья посвящена актуальной проблеме защиты мясной продукции от негативных последствий и потерь с использованием безопасной биодеградируемой барьерной упаковки в виде альгинатных покрытий. Рассмотрено влияние вида и состава, способа получения, характеристик сырья. Представлены рекомендации по основным показателям качества пленкообразователей как элемента ресурсосберегающих технологий. Приведены конкретные примеры их реализации, в том числе при производстве мясных продуктов.

Alginate-based coatings for meat product protection.

Abstract. The article is devoted to the actual problem of protecting meat products from negative consequences and losses using safe biodegradable barrier packaging in the form of alginate coatings. The influence of the type and composition, method of obtaining, characteristics of raw materials is considered. Recommendations are presented on the main indicators of the quality of film formers as an element of resource-saving technologies. Specific examples of their implementation are given, including in the production of meat products.
