Аннотация: Статья посвящена исследованию упаковочного материала с антимикробными свойствами для упаковки мяса птицы и другой мясной продукции. Были изучены полимерные композиционные материалы на основе линейного полиэтилена низкой плотности (ЛПЭНП) и полипропилена (ПП) с концентрацией модифицирующей добавки – лизоцима в количестве 1, 5 и 10 %. Образцы были получены методом плоскощелевой экструзии в ЦКП «Перспективные упаковочные решения и технологии рециклинга» и на кафедре «Промышленный дизайн, технология упаковки и экспертиза» РОСБИОТЕХ. Исследуемые материалы с лизоцимом и на основе однослойных пленок из ЛПЭНП и ПП показали антимикробную активность в отношении культур Bacillus subtilis, Candida albicans и Aspergillus niger. В результате проведённых экспериментов подобрано оптимальное соотношение компонентов в упаковочном материале для пролонгации сроков хранения мясной продукции.

Assessment of the antimicrobial properties of packaging materials modified with lysozyme

Abstract. The paper is devoted to the study of the packaging material with the antimicrobial properties for packaging poultry meat and other meat products. The authors have studied the polymer composite materials based on the linear low-density polyethylene (LLDPE) and polypropylene (PP) with a concentration of the modifying additive, lysozyme, in an amount of 1, 5 and 10 %. The samples were obtained by the method of cast extrusion in the Center for Collective Use "Advanced packaging solutions and recycling technologies" and in the Department of Industrial Design, Packaging Technology and Expertise of ROSBIOTECH. The studied materials with lysozyme and based on single-layer films from LLDPE and PP showed the antimicrobial activity regarding the cultures of Bacillus subtilis, Candida albicans и Aspergillus niger. As a result of the performed experiments, the optimal ratio of the components in the packaging materials was selected for extension of shelf-life of meat products.
