Abstract. For the successful creation of the product and its marketing promotion in the food industry, it is important to effectively and efficiently study the characteristics perceived by consumers. Therefore, there is a great interest in developing new quick methods of sensory analysis of food products aimed at increasing the efficiency of the data collection process while maintaining the reliability of the information received. These express methods are distinguished by their theoretical basis, the implementation and method of data analysis, but their relative advantages and restrictions are not largely studied. It is shown that classic descriptive analysis and operational methodologies provide similar information about the main characteristics responsible for differences in the perception of products. Moreover, it is unclear how it is best to combine these methods in order to comprehensively characterize the sensory space of a set of products.
Keywords: Profile-descriptor method, operational methods of sensory analysis.
