Аннотация: Определены качественные показатели мяса свиней породы «Мангалица», выращенных в помещении. Представлены сенсорные и физические характеристики свинины, а также химический и минеральный состав следующих видов мышц: большой поясничной, полуперепончатой, длиннейшей мышцы груди и поясницы, трехглавой мышцы плеча. Так большая поясничная мышца отличалась высоким показателем pH, хорошей влагоудерживающей способностью и низким содержанием общего жира. В полуперепончатой мышце было наибольшее количество Mg и Ca и самое низкое по значению CIEL* (самая темная мышца). Наиболее светлый оттенок (значение CIEL*), а также высокое содержание белка, общего жира и общей золы были обнаружены в длиннейшей мышце груди и поясницы.

Consumer characteristics of pork from pigs of the Mangalitsa breed

Abstract. The qualitative indicators of the meat of the Pig Mangalitsa, grown in the room, are determined. The sensory and physical characteristics of the pork are presented, as well as the chemical and mineral composition of the following types of muscles: a large lumbar, semi -transpondment, longest muscle of the chest and lower back, the three -headed muscle of the shoulder. So the large lumbar muscle was distinguished by a high PH indicator, a good moisture -holding ability and low total fat content. In the semi -transpondum muscle there was the largest amount of MG and CA and the lowest in the value of Ciel* (the darkest muscle). The lightest shade (value of ciel*), as well as the high content of protein, total fat and common ash were found in the longest muscle of the chest and lower back.
