Abstract. The paper is devoted to the development of a modified packaging polymer material with bactericidal properties to prolong the shelf-life of meat products. During the work, films based on polypropylene, gelatin and the antimicrobial additive lysozyme were obtained. The two-layer material was formed by the application of the gelatin-based layer on the backing from the polypropylene polymer film. The antimicrobial properties of the studied materials were determined by the disc diffusion method. A degree of the microbial growth on the surface of poultry meat samples after product packaging into films and storage was studied. As a result of the study, it has been established that introduction of lysozyme into the packaging material leads to inhibition or retardation of microbial growth in the product.
