Аннотация: Интенсификация табунного коневодства предусматривает улучшение продуктивных качеств лошадей. Авторы в сотрудничестве с ФГБНУ «Всероссийский НИИ коневодства» создали новую породу лошадей, которую назвали ульдургинская. Установлено её влияние на индекс мясности: в туше животных этой породы его значение было выше на 9,5 % по сравнению с исходной. Исследования химического состава мышечной ткани показали более высокое содержание белка (на 6,4-9,3 %) в мясе туш особей ульдургинской породы лошадей по сравнению с аналогами исходной бурятской породы.

Morphological composition of carcasses of young horses of the Uldurgin breed

Abstract. The intensification of stud horse breeding provides for the improvement of the productive qualities of horses. The authors, in collaboration with the All-Russian Research Institute of Horse Breeding, created a new breed of horses, called Uldurgin. The influence of the breed on the meat index was established: its value was higher by 9.5% in the carcasses of animals of the new breed compared to the original one. Studies of the chemical composition of muscle tissue have shown a higher protein content (by 6.4-9.3%) in the meat of carcasses of individuals of the Uldurgin breed compared to the analogues of the original Byryat breed.
