Abstract. In 2022-2023, everyone has already got used to the fact that new logistics has been built, mechanisms for circumventing sanctions have been developed, technological solutions have been found within the available range of food ingredients. The intermediate tasks have been solved, but the dependence remains. The political decision on the need to develop our own production of ingredients has been made, but how to approach a task that has not been solved for decades? At the Ingredients and Additives forum, held as part of the business program of the Global Ingredients Show 2024, a substantive conversation took place on ways to achieve technological sovereignty in the production of food ingredients.
