Abstract. Temperature of a perishable food product in supply networks is a critical control parameter determining its safety and quality on the consumer market of the country. Despite the development of the refrigeration equipment and refrigerated transport in our country, the problem of the control and management of product temperatures in supply networks is not fully resolved. Operation of traceability systems of “temperature history” in cold chains of perishable food supply will facilitate an increase in their safety and quality, as well as reduction of losses on the way from production to consumers. Using the federal state information system FSIS “VerIS” of Rosselkhoznadzor, including the component “Mercury”, with certain adaptation of software will allow ensuring effective control of the “temperature history” with the lowest expenses at all stages of the supply chain.
Keywords: continuous cold chain, traceability systems, food safety and quality, “temperature history” of perishable foods.
