Abstract. To give minced meat products a stable structure, it is recommended to introduce additives with high hydrophilic properties. Classic protein supplements are egg albumin and soy protein, which have high allergenic properties. Previously, the authors proposed a method of enzymatic hydrolysis of egg and soy proteins to obtain their low-allergenic hydrolysates. The purpose of this stage of the study was to investigate an effect of low-allergenic hydrolysates of soy and egg proteins on properties and quality of meat products based on horse meat. The study of the index of the hypersensitivity reaction to finished products in white mice indicates reduced sensitizing properties. The assessment of organoleptic and physico-chemical parameters, as well as safety indicators of cooked sausage and pate with low-allergenic additives was carried out.
Keywords: horse meat, egg white hydrolysate, soy protein hydrolysate, meat product, hypoallergenicity.
