Abstract. There are no small details in the production technology of meat products: The raw materials we deal with are multicomponent, multifunctional, biologically active. For this reason, the process of managing the quality of finished products is comparable to solving multifactorial tasks with a large number of variables: many features and small "tricks". The material offered to readers is not an article or a review: it contains concise information in the form of analysis or advice on some specific technological issue or production situation. Of course, some tips are not universal and acceptable for all enterprises due to the specifics of the raw materials used, the product range and the equipment used. However, in our opinion, some of the above "technologisms" may be useful not only for understanding the intricacies of sausage production, improving the product quality management system, optimizing certain process parameters, but also for improving the professional level of specialists.
