Abstract. A growth in the economic efficiency of poultry processing enterprises in Russia (RF) can be achieved by increasing the mass fraction of eggs to 100% in the formulations of semi-finished products, cooked and semi-smoked sausages. In order to increase the cohesion of meat-and-egg components in the coagulation structure of sausage meat, proteins, yolks or melange in a solid state are introduced into their formulations, obtained by a new method of using beef connective tissue protein (Biopro-A) followed by freezing of egg components. Based on the obtained research results, technologies have been developed for meat-and-egg cooked, semi-smoked sausages and semi-finished products with registration in the form of appropriate technical specifications.
Keywords: new meat and egg products, egg components in the formulation, their mass fraction of more than 10%, comparability of amino acids with FAO/WHO standards, collagen (Biopro-A), heterogeneity of pieces of sausage meat on the cut surface.
