В настоящее время является актуальным применение низкотемпературной тепловой обработки для изготовления мясной продукции. Такой способ обработки позволяет максимально увеличить сроки годности, сохранить в продукте все полезные микро- элементы и уменьшить потери в отличие от традиционных методов (варка, тушение, жарка и др.) приготовления. Принимая во внимание рост потребления продуктов из мяса птицы, целью нашей работы являлось изучние влияния низкотемпературной тепловой обработки на формирование органолептических и сенсорных характеристик кулинарных изделий из мяса индеек. На основании полученных данных рекомендованы оптимальные параметры изготовления этих изделий из голени индейки.
Nowadays, the use of low-temperature thermal processing for meat product manufacture is topical. The low-temperature method for thermal processing allows maximum extension of shelflife, preservation of all wholesome microelements in a product and reduction of losses contrary to the traditional methods (cooking, stewing, frying and others). Taking into account an increase in consumption of poultry meat products, the aim of our study was to investigate an effect of lowtemperature thermal processing on formation of sensory characteristics in culinary products from turkey meat. Based on the obtained data, the optimal parameters are recommended for production of culinary products from turkey drumsticks.
