It was established that the probiotic Provitol at a dose of 1250 g/t and vitamin C at a dose of 500 g/t of feed should be included into the broiler chicken diets of the corn-wheat-sunflower type with a subtoxic dose of nitrates in order to increase meat productivity. In the indicated doses, these preparations contributed to an increase in the meat productivity of broiler chickens and the output of carcasses of the 1st category. A significant (P <0.05) decrease in the level of nitrates by 51.82% and nitrites by 71.43% was observed in the samples of the pectoral muscle from broilers of the 3rd experimental group compared to poultry of the control group. It was concluded that meat from broilers of the 3rd experimental group had higher organoleptic characteristics compared to the control.
