Losses in the mass of raw meat occur along the entire path of movement in the links of the cold chain from the producer to the consumer. The analysis of the state of the regulatory framework at meat processing plants, transport and trade was carried out according to the previously developed norms of natural loss, and the specific weight of beef mass losses at these stages was determined.
