АННОТАЦИЯ: Мониторинг субкриоскопических температурных режимов хранения показал, что применение вакуумной упаковки бескостных мелкокусковых полуфабрикатов из свинины (БМПС) и групповой упаковки в картонные короба позволяет обеспечить стабилизацию температуры продукта при длительном хранении. Исследования качественных изменений БМПС, хранившихся при субкриоскопическом режиме при температуре воздуха от – 2,0 до – 2,6 °С, показали, что уровень микробиологической обсемененности 105 достигается в продукте без льдообразования через 43 сут, а в продукте с частичным льдообразованием — после 54 сут хранения.

Abstract. Monitoring of sub-cryoscopic temperature storage conditions showed that the use of vacuum packaging of boneless small-sized semi-finished pork products (BMPS) and group packaging in cardboard boxes makes it possible to stabilize the temperature of the product during long-term storage. Studies of qualitative changes in BMPS stored under subcryoscopic mode at an air temperature of -2.0 to -2.6 °C showed that the level of microbiological contamination of 105 is achieved in the product without ice formation after 43 days, and in the product with partial ice formation - after 54 days of storage.
