АННОТАЦИЯ: Представлен процесс ферментативного гидролиза мясокостного сырья животного происхождения для получения белкового продукта с повышенным содержанием отдельных эссенциальных аминокислот, влияющих на психоэмоциональное состояние человека. Дан аминокислотный и фракционный состав продукта, который получен за счет высокого диспергирования исходного сырья. Разработанная методология будет способствовать вовлечению в целевой оборот малоиспользуемые отходы пищевого сырья.

Protein ingredients for production of psycho-emotional products

Abstract. The process of enzymatic hydrolysis of meat and bone raw materials of animal origin is presented to obtain a protein product with a high content of individual essential amino acids that affect the psycho-emotional state of a person. The amino acid and fractional composition of the product is given, which is obtained due to the high dispersion of the feedstock. The developed methodology will contribute to the involvement of little-used waste of food raw materials in the target turnover.
