АННОТАЦИЯ: В ходе эксперимента в условиях техногенной зоны проведена сравнительная оценка качественных характеристик мяса молодняка свиней пород (мясосального направления продуктивности) ливенской, северокавказской и крупной белой. Установлено, что лучшими убойными показателями, пищевой и биологической ценностью и санитарно­гигиеническими качествами мяса при наличии повышенного фона тяжелых металлов в кормах отличались подсвинки крупной белой породы. При этом в образцах мяса и готового блюда из сырья животных крупной белой породы ни в одном случае не было установлено превышения ПДК по цинку, свинцу и кадмию.

Influence of heavy metals on pork quality characteristics

Abstract. In the course of the experiment in the conditions of the technogenic zone, a comparative assessment of the qualitative characteristics of the meat of young pigs of the Liven, North Caucasian and Large White breeds (meat direction of productivity) was carried out. It was established that the best slaughter indicators, nutritional and biological value and sanitary and hygienic qualities of meat in the presence of an increased background of heavy metals in the feed were distinguished by gilts of a large white breed. At the same time, in the samples of meat and ready-made dishes from raw materials of animals of large white breed, in no case was it found that the maximum concentration limit for zinc, lead and cadmium was exceeded.
