АННОТАЦИЯ: Термическая обработка мяса неизбежно приводит к образованию в нем новых химических соединений. Зачастую они обладают канцерогенной и мутагенной активностью. В частности, к таким соединениям относятся гетероциклические ароматические амины (ГАА). Цель настоящей работы — исследование влияния использования различных видов растительных масел на количество образующихся в мясной продукции этих соединений в ходе ее термической обработки. Результаты экспериментов показали, что наибольшего снижения содержания ГАА и образования наименьшего количества ПАУ удалось достичь при использовании масла авокадо. Проведенные исследования показали, что использование растительных масел позволяет ощутимо снизить количество образующихся в мясе канцерогенов.

Abstract. Heat treatment of meat inevitably leads to the formation of new chemical compounds in it. Often they have carcinogenic and mutagenic activity. In particular, such compounds include heterocyclic aromatic amines (HAA). The purpose of this work is to study the effect of the use of various types of vegetable oils on the amount of these compounds formed in meat products during its heat treatment. The results of the experiments showed that the greatest reduction in the content of GAA and the formation of the smallest amount of PAHs was achieved when using avocado oil. Studies have shown that the use of vegetable oils can significantly reduce the amount of carcinogens formed in meat.
