АННОТАЦИЯ: Данная статья посвящена изучению стереометрических и антропометрических параметров тушек цыплят­бройлеров современных кроссов. Анализ антропометрических параметров позволяет определить среднестатистические размеры современных тушек птицы, изменившихся за последние десятилетия, а стереометрические параметры — рассчитать их объём и положение. Эти данные необходимы для расчёта и проектирования нового технологического оборудования для автоматизированной разделки и обвалки тушек птицы и совершенствования самого процесса.

Investigation of stereometric and anthropometric characteristics of gutted carcasses of broiler chickens

Abstract. This article is devoted to the study of stereometric and anthropometric parameters of broiler chicken carcasses of modern crosses. The analysis of anthropometric parameters makes it possible to determine the average sizes of modern poultry carcasses that have changed over the past decades, and stereometric parameters — to calculate their volume and position. These data are necessary for the calculation and design of new technological equipment for automated cutting and deboning of poultry carcasses and improving the process itself.
