АННОТАЦИЯ: Настоящее исследование посвящено оценке возможностей применения кавитационных эффектов низкочастотного ультразвука для процесса модификации растительных полисахаридов с целью стабилизации эмульсий Пикеринга. На основе полученных результатов разработаны рекомендации по использованию частиц наноцеллюлозы в качестве стабилизизирующих ингредиентов в этих эмульсиях, которые можно включать в состав мясных эмульсий. Для оптимизации процесса получения устойчивых эмульсий рекомендовано использование эффектов кавитации низкочастотного ультразвукового устройства погружного типа в режиме воздействия: мощность 630 Вт/л (100 % от паспортного значения), длительность — 16 мин (последовательно по 4 мин с перерывом 3 мин) при контроле температуры 50 °С.

Abstract. The present study is devoted to assessing the possibilities of using the cavitation effects of low-frequency ultrasound for the modification of plant polysaccharides in order to stabilize Pickering emulsions. Based on the results obtained, recommendations have been developed for the use of nanocellulose particles as stabilizing ingredients in these emulsions, which can be included in meat emulsions. To optimize the process of obtaining stable emulsions, it is recommended to use the effects of cavitation of a low—frequency ultrasonic submersible device in the exposure mode: power 630 W / l (100% of the passport value), duration - 16 minutes (sequentially 4 minutes with a break of 3 minutes) at a temperature control of 50 ° C.
