АННОТАЦИЯ: В условиях южных регионов нашей страны из молодняка молочных пород скота целесообразней откармливать бычков черно­пестрой породы на рационах, основу которых составляют корма местного производства, с добавками МЭК протосубтилина Г3х в дозе 300 г/т комбикорма. При этом по сравнению с бычками красной степной породы они отличаются более высокой мясной продуктивностью, пищевой и биологической ценностью производимой говядины. По общей сумме баллов опытный образец из мяса бычков черно­пестрой породы достоверно (Р<0,05) превзошел контрольный образец мяса животных красной степной породы на 1,29 балла, в первую очередь за счет баллов за вкус и аромат.

Nutritional and biological value of meat from young bulls of dairy breeds

Abstract. In the conditions of the southern regions of our country, from young dairy cattle breeds, it is more expedient to fatten black-spotted calves on rations based on locally produced feed, with additives of IEC protosubtilin G3x at a dose of 300 g/ t compound feed. At the same time, compared to the Red steppe bulls, they differ in higher meat productivity, nutritional and biological value of the beef produced. According to the total amount of points, the prototype from the meat of black-haired bulls significantly (P<0.05) surpassed the control sample of the meat of animals of the red steppe breed by 1.29 points, primarily due to points for taste and aroma.
